Thyme After Thyme (Vodka)

INGREDIENTS:

2oz Okanagan Spirits Vodka 
½ oz Berry and Thyme Shrub
½ oz Lemon Juice
1oz Honey Fennel Syrup
Bittered Sling Lem Marrakech 

METHOD:

Berry and Thyme Shrub:

1 cup Berries
½ cup Sugar
8 Sprigs Thyme
Muddle and leave for two days

Add ½ cup Apple Cider Vinegar, muddle and leave for one more day

Strain and refrigerate 

Honey Fennel Syrup:

½ cup honey
½ cup water
½ cup sliced fennel 

Bring to boil in small saucepan and take off heat immediately, allow to cool and refrigerate for one day. Strain to remove fennel and keep refrigerated.

Cocktail:

Place all ingredients into an ice-filled shaker. Shake and double strain into a coupe. Garnish with a lemon and thyme sprig.
